Prosciutto and Strawberry Salad (Gluten Free, Paleo, AIP)

This Prosciutto and Strawberry AIP salad requires no cooking and comes together in a cinch. It’s also light and refreshing, which is perfect for the summer heat. Big ass salads are one of my go to lunches. Prosciutto is one of my favorite AIP salad add ins, and is great for those days that I just can’t cook something up.

I’m a bit of a food snob when it comes to things like olive oil, but for good reason - quality fats are an essential piece of a healthy diet, fake oils are abound on grocery store shelves, AND it’s where the flavor is at. Spending a little extra on a quality oil can really make a dish (and make it easier to get in your veggies). My absolute favorite finishing oil is Kasandrinos Olive Oil. Instructions

  1. Toss greens, strawberries, red onion, and prosciutto.

  2. Drizzle with olive oil and apple cider vinegar. Top with a generous sprinkle of Super Gyro seasoning. Enjoy!

Notes

There are no amounts for this recipe - it's a salad, just do what feels right! I also like it with feta or goat cheese and a sprinkle of hemp seeds.

For an alternate salad dressing try: Primal Kitchen Avocado Oil + Apple cider vinegar, lime, or lemon juice + Primal Palate Super Gyro Seasoning or Hepp’s Lemon Finishing Salt + black pepper (omit for AIP)
